These sound so delicious and I just happen to have two over ripe bananas sitting on my counter right now! I’m on kind of a waffle kick lately so these are perfect. These waffles are delicious, Kelly. I made them for dinner tonight and we all devoured them! Thanks so much for sharing your yummy recipes with us. I love to bake and it is nice to have some new recipes that I know will turn out. My FA daughter loves the many new treats and I always get rave reviews from non allergic friends as well. I just got your cookbook as a Mother’s Day present and I am so excited to try all your recipes!

These look delicious. I make a banana coconut chocolate chip cookie that has similar ingredients. I use brown rice flour (no gluten) and agave in place of the sugar! Of course, I like to throw in dark chocolate chips as well but they do have dairy in them.

Made these for dinner the other night when I was short on time. Hubby enjoyed them – he’s a waffle lover. I’m thinking I could substitute pumpkin for the banana and get the same great results. Thanks for another great recipe. On a different note, I recently met a sweet young lady who discovered she had dairy/egg allergies a couple years ago. I told her about your website and your cookbook. She was very excited to check them out so I’m sure you’ll have another fan.

Made these Monday morning to take the edge of the “monday’s” for all of us, whipped up quick as promised and they were super yummy. I love that they were sweet enough without syrup and a little powdered sugar and more bananas on top looked so pretty. I got your cookbook about a month ago and haven’t made anything that my allergy and nonallergy family members didn’t LOVE!

One thing I have really missed is eating at IHOP (Internat’l. House of Pancakes). These waffles were just as good (if not better) than any of their yummy flavored pancakes!! The whole family loved them!!!
On a different note… I love to make homemade icecream (usually made mine with milk & heavy cream)… now that we cannot have dairy do you have any substitute ideas? Would rice or soy milk work? If you have any recipies or ideas, I’d love to get them!! Thanks!!
